In a bowl, whisk together the soy sauce, apple cider vinegar, honey, olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, ground cumin, black pepper, and salt to create the marinade.
Place the pork shoulder in a large resealable plastic bag or a shallow dish.
Pour the marinade over the pork shoulder, ensuring it is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, or preferably overnight, turning the pork occasionally to ensure even marination.
Preheat your oven to 325°F (160°C).
Remove the pork shoulder from the marinade and place it in a roasting pan or baking dish. Reserve the marinade.
Roast the pork shoulder in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender and easily pulls apart with a fork.
While the pork is roasting, you can baste it occasionally with the reserved marinade for added flavor.
Once cooked, remove the pork shoulder from the oven and let it rest for about 10-15 minutes before slicing or shredding.
