Heat olive oil in a large skillet over medium heat.
Add minced garlic and red pepper flakes to the skillet and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through.
In a small bowl, mix together soy sauce, honey, and lemon juice.
Pour the soy sauce mixture over the cooked shrimp in the skillet and toss to coat evenly.
Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and coat the shrimp.
Season with salt and pepper to taste.
Remove from heat and sprinkle chopped fresh parsley over the shrimp.
Serve the "Happy Shrimp" hot over cooked rice or with crusty bread on the side.
