Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
Cook the macaroni according to the package instructions until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly, until the mixture is smooth and bubbly.
Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Cook until the mixture thickens and comes to a simmer, about 5 minutes.
Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth. Season with salt, black pepper, and paprika, if using.
Add the cooked macaroni to the cheese sauce and stir until well coated.
Pour the macaroni and cheese mixture into the prepared baking dish, spreading it out evenly.
If desired, sprinkle breadcrumbs evenly over the top of the macaroni and cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the top is golden brown.
Remove from the oven and let it cool slightly before serving.
